Preparation and cooking overview
Whipping up this roasted turkey and gravy couldn't be simpler. Start by browning the seasoned turkey breast in a skillet. Then, pop it in the oven. While it's roasting, prepare a luscious gravy with chicken broth, almond flour, heavy cream, and xanthan gum. In less than an hour, you'll serve a delicious dinner!
Chef's note
Feel free to jazz up the seasoning with fresh herbs. Instead of thyme, try basil or oregano. Swap out the thyme for fresh basil or oregano for a different flavor. Craving a bit more zing? Toss in garlic powder, paprika, or your favorite spice. And if you're after some heat, a pinch of red chili or cayenne pepper will do the trick.

Cooking methods
Preparation steps
- Gather and measure all the ingredients.
- Pat the turkey breast dry with a paper towel.
Cooking instructions
Roast the turkey breast
- Preheat your oven to 350°F (175°C).
- Put the turkey breast in a mixing bowl. Add in dried thyme, dried rosemary, dried sage, sea salt, black pepper, and a tablespoon of olive oil. Gently massage the seasoning mix onto the turkey breast.
- In an ovenproof skillet, heat one tablespoon of olive oil over medium-high heat.
- Once hot, add the turkey breast and sear for 2-3 minutes on each side until it develops a golden-brown crust.
- Transfer the skillet to the preheated oven and roast the turkey breast for about 30-35 minutes.
- After roasting, let the turkey sit for 5 minutes, then slice and serve with gravy.
Prepare keto gravy
- In a saucepan, melt the butter on medium heat.
- Add almond flour to the melted butter. Stir constantly and cook for 2-3 minutes until the mixture is golden brown.
- Slowly add the chicken or turkey broth to the saucepan, whisking to avoid lumps.
- Mix in the xanthan gum, then let the mixture simmer.
- Keep stirring and let it simmer for 5-7 minutes until the gravy reaches your preferred thickness.
- Mix in the heavy cream and cook for another 2-3 minutes.
- Add sea salt and black pepper to taste.
- For a smoother gravy, strain it through a fine strainer. Serve with turkey slices.
Chef's pro tip
To get that perfect darker almond flour gravy, timing is key. Add your liquid just as the flour turns golden. Be cautious – if it cooks too long, the flour can burn, affecting the taste. Keep a close eye for the best results!

I have been visiting your website but it’s my probably first time trying one of your recipes. Actually even the cast iron thing is quite plausible because cast iron is very healthy unlike those non stick pans. I do not use mine at all until now because it’s heavy and hard to clean (mine is
like a grill), Somehow I haven’t thought of using cast iron in the oven too, one less pan to clean! I’m very clumsy in the kitchen, I was afraid I was gonna burn myself while holding a heavy hot pan but thank god it went well. I’m going in and out of keto-low carb due to having to cook all the time myself.
It’s also my first time to cook a turkey breast that turns out not too dry. I have never tasted gravy before, I knew it could be very tasty, I suppose this might be better than original one. this recipe of yours is heavenly delicious, thank you a lot!
