The sausage really is the star of the dish, and we could have just done a recipe for smoked sausage with peppers and onions (definitely delish), but we wanted to do something a little more casserole centric.

Cooking methods
Preparation steps
- Gather all the ingredients needed for the recipe.
- Measure them in precise quantities.
- Wash the vegetables.
- Dice the onions and mince the garlic.
- Core and chop the cabbage.
- Shred the mozzarella cheese if not already shredded.
- Slice the sausage to desired thickness.
Cooking instructions
- Preheat the oven to 400°F (200°C).
- Heat the butter in a 10.5" or larger cast iron skillet over medium-high heat until melted and hot.
- Add the sliced sausage to the skillet and cook for 2-3 minutes per side until browned.
- Add the diced onion, minced garlic, pepper, and chopped cabbage to the skillet. Cook, stirring occasionally, for about 10 minutes or until the vegetables have softened.
- Add the diced tomatoes to the skillet and top with shredded cheese.
- Transfer the skillet to the preheated oven and bake for about 10 minutes, or until the cheese is melted, bubbly, and starting to brown.
- Remove from the oven and serve immediately.

Chef's pro tip
Don't overcrowd the skillet. Cook the sausage in batches if you don't have a large skillet. Doing this allows sufficient space for the sausages to brown and caramelize evenly. This simple step results in a flavorful and well-textured dish.

Storage tips
Allow the skillet to cool completely before storing any leftovers. Transfer them into an airtight container or cover the skillet tightly with foil or plastic wrap. You can store the leftovers in the refrigerator for 3-4 days.
Note: We don't recommend freezing as it changes the texture and taste of the recipe.
Reheating tips
Note: Avoid reheating the dish multiple times, as it can result in overcooked or dry cabbage. It's best to heat only the portion you plan to consume and store the rest for later use.

Hi I will be trying this recipe, but first I have a ? about my cast iron pan. The pan came pre-seasoned. After I use it I rinse it out but it rust every time. What am I doing wrong?.Thanks Kathy@katheynicosia@gmail,com
Alex Lester says
Hi Kathy, I'm guessing that the seasoning isn't quite up to where it needs to be, are you drying it completely after rinsing? Any water left on the pan will cause it to rust. Have a look at our post which details how to season and care for cast iron - https://www.castironketo.net/blog/how-to-season-cast-iron
Percilla says
If you wash a cast iron skillet and you want it to stay non stick and not rust. After you rinse it, put it back on the stove and heat it till it’s good and hot. Then put just a few drops of cooking oil in it and rub it around good till you know it’s good and rubbed in.
cathy says
I've always been under the impression that tomatoes in cast iron is a no no
Alex Lester says
Not true! Your pan may need just a bit more love after making a tomato heavy dish but the amount of tomatoes in this recipe won't change a thing. Now, if you were making a tomato soup in a cast iron pot it would be ok but you'd need to make sure to rub it down with a good amount of oil after using it that way.
Suzanne says
How many servings is this? Or serving size?
Alex Lester says
It's listed at the top of the recipe.
Sonia says
Hi Alex!
This dish was really good. My husband is a minimalist with words, but I actually got a “this is really good babe!” Unusual for him. Lol! Thank you so much for sharing this recipe. I’ll for sure be making this dish again.

Made this tonight. Sam's Club had the Kiolbassa brand in beef only. A 46 oz. pkg. I used 3 links. Needed a little more cabbage. Didn't use a cast iron skillet. Very tasty. Husband had 2 helpings. Will make again with maybe a cheese sauce instead.
Lucia Dargis says
My husband and I love this recipe! I add baby Bella mushrooms-we love mushrooms. We live in Florida now and originally from Chicago-so normally disappointed in store bought Polish sausage vs authentic. This brand is not authentic, but very good and not fatty or rubbery!
Thanks for the recipe and introducing “Kilobassa” brand!
Lucia
Alex Lester says

Do I use fresh or tinned tomatoes?
Alex Lester says
You can use either!
Rob says
Alex -- Can't wait to try this recipe! Sorry if this is a stupid question, but does the nutritional info refer to the whole recipe or a single serving? Thanks!
Alex Lester says
Hi Rob, the nutritional info is for one serving.
Tina Crouch says
I made this last night and it was delicious! The cabbage came out really sweet
Rose says
What if we don't have cast iron?
Rick says
Good, but I think I may add red pepper and sliced jalapenos next time. Didn't have any garlic and just used garlic powder, so maybe thrash why it was a bit bland to me
Matthew says
I made this a bit differently, I'm not a fan of cooked cabbage so I used broccoli for the greens and added mushrooms. Came out fantastically thanks for the idea!
Kenyon Lewis says
What is the suggested serving size?
leeanne ouimette says
Can it be frozen in smaller containers
Alex Lester says
Yes!
Kay Kohler says

Delicious! Used mild verde salsa instead of the bell pepper because it was what we had. My one year old loved the whole thing, especially the cooked cabbage mixed with the sausage.

I made this today, it was just the thing to brighten up a day of "social distancing!" I used a can of Rotell since that's what I had, and added shredded sharp cheddar with the Mozzarella. Truly one of the best keto dishes I've ever made, thanks for the recipe!
Sheila Malone says
Very good. Made just as recipe called. Family really enjoyed.

I substituted roasted red peppers and powder garlic as I had run out of fresh peppers and garlic.... it was yummy. Next time I will add dollops of fresh ricotta as well!

Totally loved this dish! Even my non cabbage loving dad. Making it again. I think this will become a "go to" recipe. I even "pinned" it! Thanks for getting it together.

Great recipe and easy. Instead of Keilbasa I used Aidells all natural chicken and apple smoked sausage. The meal was so satisfying. I also used olive oil to cook everything.

Quick and easy. We have very large Ukrainian population where I live so there are a lot of kielbasa options 😋 I mixed two different brands to try and turned out great. This is my first cast iron keto recipe so I’ll definitely check out more!

Ohhhh my taste buds!! This is so incredibly good!

This was a delicious and easy dinner. I used garlic sausage, cabbage, red, green and yellow peppers and a little jalapeño because we like spice. I used a can of hot rotel because that’s what I had and also used mozzarella abs Monterey Jack. So good! I also broiled it for a few minutes after it cooked to get a nice brown topping. Thank you so much for sharing
Nancy says
I don’t have cast iron skillet - what should I use in oven instead?
Cast Iron Keto says
Hi Nancy - you'll need to use a classic baking dish in the oven or an oven-safe skillet like copper or stainless steel.

I made this a few weeks ago, and it was amazing! Tonight, I have everything except for mozzarella, so cheddar will have to do. I am blind, so not going to mess with trying to get to the store. After seeing all of your comments on this, it sounds like I am good to go there. Thanks for the recipe, Alex, and all of you for sharing your interesting changes. Always good to know its okay not to have an ingredient on hand.
