The cheesy goodness with crackers or fresh vegetables, man we could make a meal just off dips alone. It’s like a grown-up more sophisticated version of a Jalapeno Popper Dip and, well, what could be better than that?

We're using Castello Gouda which is a mild and creamy cheese that’s perfect for any occasion and recipe. It has a rich, buttery, and slightly sweet flavor with a silky smooth texture that mixes into a piping hot dip perfectly.
Castello has been making delicious cheese since 1893, and it shows! You'll start by shredding the Gouda, then mixing it up with cream cheese, sour cream, serranos, bacon, green onions, garlic powder, and white pepper.

Can I use Jalapenos instead of serranos?
Yes, you can! I like the serrano flavor better than jalapenos in this dip but both will work if you can’t find serranos. You could also use a Fresno chili or even crushed red pepper flakes if needed.

Spicy Gouda Bacon Dip
Ingredients
- 8 ounces Castello Gouda Cheese shredded
- 8 ounces cream cheese
- 1 cup sour cream
- 2 serranos minced
- 8 slices bacon cooked and crumbled
- 4 green onions minced
- ½ teaspoon garlic powder
- ½ teaspoon white pepper
Keto-Friendly Dippers:
- Keto-friendly crackers
- Celery sticks
- Strips of bell pepper
- Pork rinds
Instructions
- Preheat oven to 350° F.
- In a medium bowl mix together the shredded Castello Gouda Cheese, cream cheese, sour cream, minced serranos, crumbled bacon, minced green onion, garlic powder, and white pepper until combined. Transfer to an 8” cast-iron skillet.
- Transfer to the oven and bake for 25 minutes until hot and bubbly. Serve with keto-friendly dippers listed above.
