      I made this a few weeks ago, and it was amazing! Tonight, I have everything except for mozzarella, so cheddar will have to do. I am blind, so not going to mess with trying to get to the store.       This was a delicious and easy dinner. I used garlic sausage, cabbage, red, green and yellow peppers and a little jalapeño because we like spice. I used a can of hot rotel because that’s what I had and also used mozzarella abs Monterey Jack. So good! I also broiled it for a few minutes after it cooked to get a nice brown topping.       My husband and I love this recipe! I add baby Bella mushrooms-we love mushrooms. We live in Florida now and originally from Chicago-so normally disappointed in store bought Polish sausage vs authentic. This brand is not authentic, but very good and not fatty or rubbery!

        Not true! Your pan may need just a bit more love after making a tomato heavy dish but the amount of tomatoes in this recipe won't change a thing. Now, if you were making a tomato soup in a cast iron pot it would be ok but you'd need to make sure to rub it down with a good amount of oil after using it that way.

      Hi I will be trying this recipe, but first I have a ? about my cast iron pan. The pan came pre-seasoned. After I use it I rinse it out but it rust every time. What am I doing wrong?.Thanks Kathy@katheynicosia@gmail,com

        Hi Kathy, I'm guessing that the seasoning isn't quite up to where it needs to be, are you drying it completely after rinsing? Any water left on the pan will cause it to rust.         If you wash a cast iron skillet and you want it to stay non stick and not rust. After you rinse it, put it back on the stove and heat it till it’s good and hot. Then put just a few drops of cooking oil in it and rub it around good till you know it’s good and rubbed in.
