One thing we're obsessed with here at CIK is holiday candy! We have a list a mile long of traditional confections that we'd love to remake into keto-friendly treats and this Sugar-Free Chocolate Almond Turtle Candy is already one of our favorites.
The caramel is perfectly chewy and stays that way even after refrigerating, it's like magic 🪄. We truly can't believe how weel these turned out, you're going to love them!
This Keto Turtle Candy has just three ingredients!
- Sugar-free chocolate chips - we use Lily's Dark Chocolate Chips as they are low-carb and dairy-free, feel free to use whatever chocolate you wish.
- Whole almonds - roasted but not salted, you can also use any kind of nut: pecans, macadamia, peanut, hazelnut - all would be delicious.
- Our sugar-free caramel recipe - this caramel has been tested 20+ times and yields perfect results. It's super versatile as it can be a syrup, a sauce, or as in this recipe, a thicker chewier style caramel. It's truly a jack of all trades.

How to make Keto Turtle Candy
- First, you'll make a batch of our caramel making sure to follow the instructions for the thicker, chewier style caramel.
- Next, you'll place dollops of the caramel on a parchment-lined baking sheet, top with a few almonds, then freeze until the disks are very firm.
- Then, melt the chocolate chips. To make dipping the turtle candy even easier, you can add a teaspoon or two of coconut oil or cacao butter to help the chocolate go on smooth. Quickly dip each disk into the chocolate covering all sides, place it back on the parchment-lined baking sheet.
- Repeat with remaining disks. then transfer the baking sheet back to the freezer until the chocolate is set.
- If desired, you can drizzle the leftover chocolate over the turtles for a fun design but make sure you do this after the initial chocolate is set. Otherwise, the two will just bleed together and the drizzle won't be visible.





How to store the turtle candy
Store the candy in an airtight container in the refrigerator for up to one week - we promise they won't last that long though 😉

Ingredients
- 1 batch keto caramel make according to the recipe for very thick caramel [instruction #3]
- 1 cup roasted almonds
- 8 ounces dark chocolate chips we use Lily's Dark Chocolate Chips
Instructions
- First, you'll make a batch of our caramel making sure to follow the instructions for the thicker, chewier style caramel. Let it cool.
- Next, place 15 dollops of the caramel on a parchment-lined baking sheet, top with a few almonds, then freeze until the disks are very firm, about 15 minutes.
- Melt the chocolate chips in a small skillet or in a microwave safe bowl in 15 second increments. . To make dipping the turtle candy even easier, you can add a teaspoon or two of coconut oil or cacao butter to help the chocolate go on smooth. Quickly dip each disk into the chocolate covering all sides, place it back on the parchment-lined baking sheet.
- Repeat with remaining disks. then transfer the baking sheet back to the freezer until the chocolate is set, about 5 minutes.
- If desired, you can drizzle the leftover chocolate over the turtles for a fun design but make sure you do this after the initial chocolate is set. Otherwise, the two will just bleed together and the drizzle won't be visible. Store in an airtight container in the refrigerator for up to one week.
