This Keto Turtle Candy is perfect for the holidays! They're gluten-free, dairy-free, plant-based, sugar-free, and low-carb making them perfect for everyone this holiday season.
First, make a batch of caramel, following the instructions in this recipe. Let it cool.
Put 15 spoonfuls of caramel on a paper-lined tray. Put some almonds on each. Freeze them for 15 minutes until they're really hard.
In a bowl or pan, melt your chocolate. If using a microwave, heat for 15 seconds at a time. Add a bit of coconut oil or cacao butter to make the chocolate smoother.
Quickly dunk each caramel piece into the chocolate. Make sure it's all covered. Put them back on the tray.
Place the tray in the freezer for 5 minutes. Wait until the chocolate is hard.
If you have melted chocolate left, drizzle it over the candies for a cool look. Do this after the first chocolate layer is hard, so the designs show up.
