These Keto Chocolate Fudge Mint Chip Brownies fit that bill nicely with added chocolate chips and peppermint. We’re also topping them off with a quick and easy peppermint buttercream that’s so delicious you’ll want to eat it with a spoon. [side note: we were grocery shopping recently and saw that there are now single-serving frosting packets, for snacking...where’s the keto version of these please?!]
We're using Pacific's Unsweetened Hemp Beverage in these brownies which adds such a nice creamy and nutty flavor. It’s also great for getting the perfect texture for peppermint buttercream. Even better? Pour up a cold tall glass to have on the side with a brownie, now THAT’S a treat!

This is the perfect keto brownie recipe for holiday parties and will impress even the gluten and dairy-loving crowd. While we do list butter in the ingredient list you can also use a vegan butter substitute or coconut oil for a dairy-free version.
We went a little festive with these adding a bit of crushed sugar-free candy canes to the top, they’re totally not necessary but we love the pop of color. You could also use some cacao nibs for a bit of crunch!

Can I make this recipe vegan?
Yes! You can use a vegan egg replacer or a chia or flax egg to replace the eggs. Our vote is for a mix of chia and flax eggs for the best texture. For dairy-free just swap out the butter for a vegan replacement like coconut oil in the brownie and sub in a clean palm shortening for the icing.
Can I use a regular pan?
Yes! An 8x8 brownie pan will work perfectly here.

Keto Chocolate Fudge Mint Chip Brownies
Ingredients
- 1 stick unsalted butter melted (or coconut oil or vegan butter for vegan)
- 3 large eggs see post for vegan options
- 1 cup powdered erythritol
- ¾ cup almond flour
- ¾ cup cocoa powder
- 2 tablespoons coconut flour
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- ¼ cup Pacific Unsweetened Hemp Beverage
- ½ cup sugar-free chocolate chips dairy-free if vegan
Peppermint Icing:
- 1 cup unsalted butter softened (or palm shortening or vegan butter)
- 1 cup powdered erythritol
- 1 teaspoon peppermint extract
- 1 tablespoon Pacific Unsweetened Hemp Beverage
Optional Toppings:
- Cacao nibs
- Sugar-free candy canes crushed
Instructions
- Preheat the oven to 350° F and grease an 8” cast iron skillet with butter.
- In a large bowl, beat together the butter, eggs, and powdered erythritol. Stir in the remaining ingredients until smooth. Transfer to the prepared skillet and transfer the skillet to the oven.
- Bake for 30-35 minutes until the edges are crisp and the center is almost set. Cool completely.
- In a large bowl, beat together the butter and peppermint extract until light and fluffy. Beat in the erythritol and hemp beverage. Ice the brownies and sprinkle with cacao nibs before slicing into 12 pieces.

Have you tried this with another dairy free milk option? Hemp milk is a bit "earthy" for me... thinking of trying it with cashew or macadamia milk.

I think the secret here is Black Cocoa powder (amazon) i used 1/8 cup of it then regular cocoa powder for the rest. Black cocoa powder (used in small amounts) really kicks up the flavor

Good brownie recipe. I thought the frosting recipe a little weak in both flavor and amount. I would definitely add more peppermint.
