When the weather turns cold, or you’ve got a cold there are few things more comforting than a big warm bowl of chicken soup. For the most part, chicken soup is synonymous with warmth...comfort...healing, and this Keto Chicken Soup won't disappoint your tastebuds or your soul.
What's in Keto Chicken Soup?
- ghee
- chicken (thighs or breasts will both work)
- carrots
- celery
- onion
- garlic cloves
- parsley
- peppercorns
- sea salt
- chicken broth (we use a chicken bone broth)
- shirataki noodles

How to make Keto Chicken Soup
- Heat the ghee over medium heat in a 5-quart Dutch oven. Saute the carrots, celery, onions, and garlic for 3 minutes.
- Add in broth, chicken, parsley, peppercorns, and salt. Cover and let simmer for 30 minutes.
- While the soup is simmering prepare the Miracle Noodles according to the package instructions. The drying step is unnecessary.
- Pull the chicken out, shred with two forks or a pair of meat claws, and place back in the Dutch oven along with the Miracle Noodles.
- Garnish with parsley and serve.
Do I have to add the noodles?
No, you don't have to add noodles!
I thought carrots aren't keto?
Keto is a metabolic state, not a food group. Carrots add a few net carbs to this recipe but tons of other nutrients. Don't fear the carrots!
Do I have to use a cast-iron Dutch oven?
We use cast iron cookware, but you don’t have to. All the recipes will work perfectly fine in whatever cookware you are using, we just prefer the simplicity of cleaning and the flavors cooking with cast iron brings out in the food.
