Instructions
Prepare the brownie batter
Melt chocolate and butter in a microwave-safe bowl.
In a separate bowl, whisk eggs and erythritol.
Combine the melted chocolate and butter mixture, peppermint extract, and sea salt into the egg mixture.
Add coconut flour and cocoa powder to the mixture while stirring. Set aside.
Prepare the filling
In another bowl, whisk cream cheese, granulated erythritol, egg, peppermint extract, and food coloring
Mix until smooth.
Assemble and bake
Pour ⅔ of the brownie batter into a lined baking dish.
Pour the mint filling over the brownie mix.
Add the remaining brownie batter on top of the mint layer, then slightly flatten and mix the batter with a silicone spatula.
Bake in the preheated oven at 350°F (175°C) for 25-30 minutes or until set.
Slice into individual servings and enjoy!
