In a mixing bowl, beat the softened butter and sweetener until creamy and well combined.
Add the egg and mix until smooth.
Add the dry ingredients: coconut flour, almond flour, cocoa powder, baking powder, and xanthan gum. Mix until a dough forms.
Shape the dough into a ball, wrap it in parchment paper, and refrigerate for about 30 minutes to firm up.
After chilling, roll out the dough between two sheets of parchment paper to your desired thickness with the help of a rolling pin.
Use Halloween-themed cookie cutters to cut out spooky shapes. If you don't have cookie cutters, you can create templates on paper, place them on the rolled-out dough, and use a knife to cut around them.
Place the cut-out cookies on a parchment-lined baking sheet.
Bake the cookies at 350°F (180°C) for 15-20 minutes or until they are firm and slightly brown around the edges.
Make the keto cream cheese icing
Mix the cream cheese and powdered sweetener in a bowl until well combined. Add one tablespoon of butter to the mixture for a firmer icing, and refrigerate it briefly.
Once the cookies are completely cooled, spread the cream cheese icing on top of each cookie using a spatula. Or transfer it into a piping bag and pipe the mixture over the cookies in any shape you want.
Rest the cookies in a refrigerator for the icing to set before serving.
