Instructions
Make the taco seasoning
Combine the chili powder, garlic powder, onion powder, dried oregano, paprika, ground cumin, sea salt, and black pepper in a small bowl.
Store the seasoning in a dry jar in your kitchen.
Cook the ground pork
Heat oil in a cast-iron skillet on medium-high.
Sauté the onion for 2-3 minutes until soft.
Add the ground pork, cook until brown, then drain the fat.
Mix in the taco seasoning and ½ cup of hot water; let it simmer for 10-15 minutes.
While simmering, get started on the keto tortillas.
Prepare the keto tortillas
Mix the almond flour, xanthan gum, baking powder, salt, egg, and water in a food processor until a dough forms.
Rest the dough for 10 minutes, wrapped in plastic.
Divide into ten balls, then roll each between parchment paper to a 20 cm diameter.
Cut out circles using a bowl, and use the extra dough for more tortillas.
Heat a cast-iron skillet and lightly oil it with olive oil.
Cook the tortillas for about a minute on each side until lightly browned.
Assemble the pork tacos
Fill each tortilla with ground pork, tomatoes, onions, cilantro, and lettuce.
Optional: Drizzle with lime juice, then serve warm and enjoy your flavorful, low-carb meal!
