Instructions
Season the chops with sea salt, black pepper, chopped fresh rosemary, thyme, and sage.
Heat a cast-iron skillet over medium-high heat.
Heat clarified butter and olive oil in a preheated skillet.

Place the lamb chops in a single layer in the skillet and cook each side for 3-4 minutes for medium-rare doneness.
