Instructions
Heat olive oil in a frying pan over medium heat. Add diced onions, cooking until they soften. Add mushrooms and cook for 2-3 minutes.
Brown the ground beef in the pan.
Season with sea salt, black pepper, and oregano. Add minced garlic and tomato paste, stirring well. Cook for two more minutes.
Pour in red wine vinegar and stock. Add frozen peas and simmer for about 5 minutes until the sauce thickens.
Preheat your oven to 375°F (190°C).
Boil the cauliflower until tender, about 15 minutes. Drain, then blend with butter and cottage cheese in a food processor to create a smooth puree.
In an oven-safe dish, layer the meat mixture. Top with cauliflower puree.
Bake for 30 minutes or until the top is golden brown.
