Instructions
In a mixing bowl, combine almond flour, sweetener, ground ginger, nutmeg, cream of tartar, baking soda, xanthan gum, and a pinch of salt. Mix well.
Gradually add the wet ingredients, eggs, heavy cream, and softened butter to the dry ingredients, stirring until a dough forms.
Shape the dough into a ball, cover it with plastic wrap, and refrigerate for at least an hour.
Preheat the oven to 170°C (340°F) and line a baking sheet with parchment paper.
Roll out the chilled dough between two sheets of parchment paper to about ¼-inch thickness.
Use cookie cutters to cut out shapes from the dough and transfer them to the prepared baking sheet in a single layer.
Bake the cookies for approximately 15-18 minutes or until they turn golden around the edges.
Once baked, remove the cookies from the oven and allow them to cool completely on a wire rack before serving or decorating.
