Instructions
In a large pot, melt clarified or regular butter over medium heat.
Add thinly sliced onions, cook for 25-30 minutes, stirring frequently, until deeply caramelized and brown.
Once onions are caramelized, add vinegar and stir for a few minutes to intensify the flavors.
Pour in warm chicken or beef stock. Add a teabag containing parsley stem, thyme sprig, and garlic clove.
Bring to a simmer and cook for an additional 30-35 minutes.
After cooking, take out the teabag with herbs.
Season with sea salt and ground black pepper to taste.
Ladle the soup into bowls. Optionally, top with keto-friendly bread and shredded cheese.
