This Keto Ground Beef Casserole is a quick and easy low-carb meal featuring savory ground beef, veggies, and melted cheese for a delicious, satisfying dish.
In a large cast-iron skillet, brown the ground beef over medium heat. Add the chopped onion and minced garlic to the skillet. Sauté until the onions become soft and translucent.
Stir in the diced bell peppers, zucchini, and sliced mushrooms. Cook for a few minutes until the vegetables are slightly tender.
Pour in the crushed tomatoes and beef broth, and add the dried oregano, dried basil, paprika, sea salt, and black pepper. Mix well to combine all the ingredients.
Let the mixture simmer for 5-7 minutes, allowing the flavors to meld together.
Transfer the ground beef and vegetable mixture to the baking dish, spreading it evenly.
Sprinkle the shredded cheddar cheese on top of the casserole.
