Instructions
Whisk together egg yolks and lemon juice in a stainless bowl until doubled in volume.
Set the bowl over a pot of simmering water. Make sure the bottom of the bowl does not touch the hot water.
Whisk continuously while drizzling in the butter in a slow and steady stream.
Remove from heat and whisk in sea salt and a pinch of cayenne pepper.
Cover and keep in a warm spot.
