Instructions
Prepare the pesto sauce
Place the basil leaves, pine nuts, Parmesan cheese, garlic, sea salt, and black pepper into a blender or food processor.
Pulse all the ingredients until they are roughly chopped.
Gradually pour in the olive oil and fresh lemon juice while continuing to pulse until the mixture reaches a paste consistency.
Transfer the sauce to an airtight jar and store it.
Cook the grilled chicken
In a small bowl, mix avocado oil, minced garlic, dried oregano, sea salt, and black pepper to make the marinade.
Put the chicken breasts in a plastic bag or a flat dish. Pour the marinade over them, ensuring each chicken piece is covered well.
Close the bag or cover the dish. Let the chicken marinate in the fridge for at least 1 hour, but it can stay up to 4 hours for more flavor.
Heat the grill pan on medium-high. Take the chicken out of the marinade.
Grill each chicken breast for about 4-5 minutes on each side until you see nice grill lines.
Once grilled, transfer the grill pan to a preheated oven at 375°F (190°C).
Roast the grilled chicken in the oven for 15 minutes or until it reaches an internal temperature of 165°F (75°C).
Take the chicken out of the oven. Let it cool a bit, then cut it into big slices.
Serve your chicken slices with a big spoonful of pesto sauce on top. Enjoy!
