Instructions
Marinade the pork chops
In a small bowl, prepare the marinade: whisk mustard, olive oil, and erythritol.
In another bowl, prepare the spice mixture: combine paprika, dried thyme, onion powder, salt, and black pepper.
Season both sides of the pork chops with the spice mixture. Then brush the marinade on one side only.
Place the seasoned chops in a single layer on a baking sheet greased with cooking spray or oil.
Bake the pork chops
Preheat the oven to 356°F (180°C).
Transfer the baking sheet with seasoned chops to the preheated oven.
Bake for 15 to 20 minutes or until the internal temperature reaches 145°F (63°C).
Saute the broccoli
Heat olive oil in a large pan on medium-high heat.
Sauté the minced garlic cloves for 1-2 minutes until fragrant.
Add the broccoli florets and peanuts to the skillet and season with salt and pepper to taste.
Cook for 5-7 minutes, stirring occasionally, until the broccoli is tender and lightly browned.
Remove the skillet from heat and sprinkle with lemon zest and fresh lemon juice.
Serve the sautéd broccoli with the juicy pork chops, and enjoy!
