Mix the lemon pepper, onion powder, garlic powder, ground cumin, cayenne pepper, and salt in a small bowl.
Coat the tuna steaks by rubbing the prepared spice mix on both sides. Once coated evenly, set them aside.
Make the wasabi sauce
Combine the heavy cream, wasabi paste, and soy sauce in a bowl.
Sprinkle a pinch of xanthan gum into the mixture and whisk until well combined.
Heat on low until it is warmed through and thickened.
Cook the tuna steaks
Heat your cast-iron skillet over medium heat for 10 minutes.
