2cupsalmond flour
¾cupgranulated brown stevia
½teaspoonbaking soda
1large egg
¼teaspoonof sea salt
½cupbutter melted and cooled to a room temperature
½teaspoonvanilla extract
½cupsugar-free chocolate chipsdivided
¼cupchopped walnutsoptional
Instructions
Start by preheating your oven to 325°F (160°C). It's important to get that oven nice and toasty.
In a big bowl, combine all the ingredients, including almond flour, baking soda, and Brown Stevia. Give them a good whisk until everything is well mixed.
Now, add the melted butter, egg, and vanilla extract to the bowl. Stir everything together until it's nicely combined.
If you're adding walnuts to your cookies, mix them in with half of the chocolate chips.
Take small portions of the dough and roll them into balls, about 1 ½ inches in size. Place these dough balls on your pre-lined baking sheet.
Use your hand to gently press each ball down until it's about ¾ inch thick. Be careful not to press too hard because the dough will spread out as it bakes.
Don't forget to press the remaining chocolate chips into the tops of the dough for that extra chocolatey goodness!
Pop the baking sheet into the oven and let the cookies bake for around 15 to 18 minutes. Keep an eye on them—they should puff up and turn golden brown around the edges.
