– 2 large eggs – ¼ cup unsalted butter, melted – ½ teaspoon baking powder – 1 scoop whey protein isolate – 1 tablespoon coconut flour – ½ teaspoon vanilla extract – ½ teaspoon xanthan gum – Pinch of salt – 2 cups coconut oil for frying – Powdered erythritol for serving

Ingredients:

1. Heat the oil in a large cast-iron skillet    over medium heat until it reaches    350°F.– ¼ cup unsalted butter, melted

2. In a medium bowl, whisk together all    of the ingredients until smooth.    Transfer the mixture to a piping bag     with a large ½" tip.

3. Slowly add the batter to the hot oil in a     circular pattern. Fry until golden,     about 3 minutes per side.

4. Remove the fried items and place     them on a paper towel-lined plate to     drain excess oil.

5. Sprinkle the fried items with powdered     erythritol for a touch of sweetness.

6. Your homemade funnel cakes are     ready to serve.
