For the nougat layer – 1 cup blanched finely ground almond flour – ¾ cup coconut flour – ½ cup sugar-free maple syrup – ½ cup milk of choice (like unsweetened almond milk or coconut milk) For the caramel layer – 1 cup peanut butter – 1 cup brown sweetener (we used stevia) – 1 cup coconut oil For assembly – 2 cups sugar-free chocolate chips – ½ cup chopped peanuts
Mix almond flour, coconut flour, sugar-free maple syrup, and milk. Spread in lined container and freeze for at least an hour.
Blend peanut butter, brown sugar substitute, and coconut oil. Pour over frozen nougat, add chopped peanuts, and freeze for 2-3 hours.
Lift frozen layers using parchment paper. Cut into bars with a sharp knife.
Melt sugar-free chocolate. Dip each bar, ensuring even coating. Place on parchment-lined tray and freeze or 15-20 minutes until the chocolate shell is firm.
