Ingredients

☐ 8 oz cream cheese ☐ 1 cup shredded cheddar cheese ☐ 6 slices bacon, cooked and chopped ☐ 2 green onions, minced ☐ 1 tbsp dried parsley ☐ 1 tsp garlic powder ☐ 1 tsp onion powder ☐ 1 tsp dried dill ☐ 1 tsp dried chives ☐ ½ tsp black pepper ☐ ½ tsp salt ☐ 1 lb chicken breasts

Instructions

1. Mix cream cheese, bacon, cheddar, green onions, and all but 1 tbsp of ranch seasoning in a bowl. 2. Preheat oven to 350°F (175°C). 3. Butterfly chicken breasts to create pockets. 4. Stuff each pocket with the cream cheese mixture. 5. Lightly spray with avocado oil and sprinkle remaining ranch seasoning on top. 6. Place in a cast-iron skillet and bake for 25–30 minutes until fully cooked. 7. Remove from oven and serve hot.

Chef'S Pro Tip

Don't pack the chicken too full, or it might spill out! Fill up only about two-thirds of the pocket with the creamy filling. To keep everything in place, you can stick a toothpick through the end of each chicken pocket.
