Add garam masala, grated ginger, and minced garlic to the bowl. Stir in the yogurt until well combined. Refrigerate for at least 30 minutes or overnight.

Place the onion, ginger, garlic, crushed tomatoes, and spices in a blender or food processor for the sauce. Blend until smooth. Refrigerate until ready to use.

Heat 1 tablespoon of oil in a large skillet over medium-high heat and add the marinated chicken along with the marinade to the skillet. Cook for 3 to 4 minutes per side until browned.

Taste the dish and add additional salt if needed. Garnish with cilantro and serve with cauliflower rice, if desired.
