Keto Almond Flour Chocolate Chip Cookies

Made with almond flour and sugar-free chocolate chips, these keto cookies are soft, chewy, and totally satisfying but low-carb!

☐ 2 cups almond flour ☐ ½ cup erythritol ☐ ¼ cup melted butter ☐ 1 large egg ☐ 1 tsp vanilla extract ☐ ½ tsp baking powder ☐ ¼ tsp salt ☐ ¼ cup sugar-free chocolate chips

Ingredients

1. Mix almond flour, baking powder, and salt in one bowl. 2. In another bowl, combine melted butter, egg, vanilla, and sweetener. 3. Combine wet and dry ingredients to form dough, then fold in chocolate chips. 4. Scoop dough onto a baking sheet, flatten slightly, and bake at 350°F for 12–15 minutes until golden. 5. Cool for 5 minutes on the sheet, then transfer to a wire rack.

Instructions

For extra flavor, add cinnamon or chopped nuts.  To get softer cookies, bake a minute less or use coconut oil.  Try different sugar-free chips or drizzle with melted dark chocolate.
