Heat the oil in a 10" or larger cast-iron skillet over medium-high heat. Fry the sliced sausage for 2-3 minutes per side until golden, remove and set aside.
Add the diced turnips and spices to the skillet. Cook 5-8 minutes until tender and starting to brown.
Add in the onions and peppers and cook for 2-3 minutes until beginning to soften.
Add the sausage back to the pan and cook for 3-4 minutes. Add in the chopped kale and allow it to cook down, stirring for 2-3 minutes. Serve immediately.
