Heat oil in a 10.5″ skillet on medium-high heat. Spice up your chicken, then fry it for about 3-4 minutes on each side until it turns brown. Take the chicken out and put it aside.
Add the onion and green chiles to the skillet. Cook for around 3-4 minutes until the onion is soft. Next, add the cream cheese and chicken back to the skillet, along with any juice from the chicken.
Sprinkle the chicken with the Monterey Jack cheese. Put the lid on the skillet and wait for about 3-4 minutes until the cheese melts. Finish with some cilantro on top, and serve.
