3/4cup65g parmesan cheese
1/3cupcoconut oilfor frying
1roma tomatoseeded and diced (85g)
2tablespoons30g red onion, minced
Juice of half a lemon
1/4cup35g capers, drained
On a medium plate mix together the coconut flour, Parmesan, paprika, garlic powder, cayenne, and pepper. In a small bowl whisk the egg.
Heat the oil in a large cast-iron skillet over medium-high heat. Dip a slice of the tomato through the egg then dredge through the flour mixture. Fry for 2-3 minutes per side until crispy and golden. Repeat with remaining slices of tomato then fry capers for 1 minute until they start to pop and are crisp. Drain both tomatoes and capers on a paper towel-lined plate.
For the crab salad mix together the remaining ingredients except for the capers in a small bowl. Chill until ready to serve.
To serve, top the fried green tomatoes with the crab salad and fried capers.
