Place the steak on a cutting board and use a sharp knife to make a slice horizontally through the steak (like a book) making sure to not cut through the other side, open it up then use a meat mallet to pour to a ¼” thickness.
Heat the butter in a 10” or larger cast-iron skillet over medium heat, add the onions to the pan and cook for 5-10 minutes until very soft and golden.
Spoon the onion mixture over the steak, top with blue cheese, and bacon. Roll the steak up tightly and secure with skewers. Cut between the skewers to make pinwheels.
Heat 2 tablespoons of oil in the skillet, sear the pinwheels for 2 minutes per side. Transfer the skillet to the oven and bake for 20 minutes. Let the pinwheels rest for 5 minutes before serving.
