Preheat the oven to 350° F (180°C) and grease an 8” cast iron skillet.
Melt the butter in a microwave-safe bowl. Once melted beat in the egg, vanilla, and brown erythritol. Mix in the almond flour, cinnamon, sea salt, and baking powder. Stir all these ingredients together until you have a smooth cookie dough.
Transfer the prepared dough to the greased skillet, spreading it evenly.
Put the skillet in the preheated oven and bake for 20-25 minutes until a toothpick inserted into the center of the cookie comes out clean.
Cinnamon "sugar" topping
Take a small bowl and mix together your cinnamon and sweetener. Let the snickerdoodles cool slightly and sprinkle them with the cinnamon "sugar" mixture.
