These keto-friendly Salted Caramel Thumbprint Cookies are the perfect blend of sweet and salty, with a delightful caramel center and a touch of flaky sea salt.
-1 batch sugar-free caramel sauce
- 2 cups almond flour
- ⅓ cup unsalted butter
- ⅓ cup sugar-free maple syrup
- 1 tablespoon pure vanilla extract
- ½ teaspoon sea salt
- Flaky sea salt
Combine all butter cookie dough ingredients in a large mixing bowl until smooth. Roll into 18 balls and refrigerate for 20 minutes.
Line a baking sheet with parchment paper. Place chilled dough balls on the sheet, 1-2 inches apart. Make an indent in each ball with your thumb or a wooden spoon.
Bake for 12-14 minutes until edges are golden brown. If centers puff up, gently reshape the indentations after baking. Let cool for 5 minutes.
Add a teaspoon of sugar-free caramel sauce to each cookie center and sprinkle with flaky sea salt. Cool completely before enjoying.
To achieve the perfect texture for your caramel biscuits, remove them from the oven when they turn golden, even if still pale. They’ll firm up as they cool, resulting in a soft, chewy texture. It’s better to underbake than overbake.
