☐ 1 pound ground beef ☐ 1 small onion, diced ☐ 2 cloves garlic, minced ☐ 2 tablespoons taco seasoning (low-carb) ☐ ½ cup diced tomatoes ☐ ¼ cup tomato sauce ☐ ½ cup vegetable broth ☐ 1 cup gouda cheese, shredded For Topping ☐ ½ cup sour cream ☐ ¼ cup jalapeños, sliced ☐ ¼ cup fresh cilantro, chopped

Brown ground beef in a cast-iron skillet over medium-high heat; drain excess fat.

Add diced onion and minced garlic; cook for 2-3 minutes until the onion is translucent.

Stir in taco seasoning, diced tomatoes, tomato sauce, and broth; simmer for 5 minutes.

Spread beef mixture evenly in the skillet and top with shredded gouda cheese.

Serve with sour cream, sliced jalapeños, and chopped cilantro.

Chef's note

Make this casserole your own by swapping gouda for cheddar or your favorite cheese. For extra spice, add cayenne or red pepper flakes to the seasoning.
