- 2 filet mignon steaks - 2 tablespoons olive oil - 2 tablespoons unsalted butter - 2 fresh garlic cloves - 2 sprigs of fresh rosemary - 2 sprigs of fresh thyme - Sea salt, to taste - black pepper, to taste
Coat steaks with sea salt and black pepper, pressing the seasoning in. Set aside.
Preheat a cast iron skillet over medium-high heat and add olive oil to coat.
Place steaks in the skillet, searing for 4-5 minutes on each side for medium-rare. Sear the sides using tongs.
Add butter, garlic, and herbs to the skillet. Tilt and baste the steaks with the melted butter.
Once steaks reach 135°F (57°C), transfer to a cutting board. Let rest, then garnish with fresh herbs or parsley before serving.
Take steaks out of the fridge 30 minutes before cooking to reach room temperature. After searing, rest for 5 minutes to redistribute juices for a juicier steak.
