Ingredients

☐ 2 medium-sized eggplants ☐ 1 pound ground beef ☐ 1 cup low-carb tomato sauce ☐ ½ cup water ☐ 2 cups shredded mozzarella cheese ☐ 1 cup ricotta cheese ☐ ¼ cup grated Parmesan cheese

Prep Eggplant

Instructions

Preheat oven to 375°F (190°C). Salt eggplant slices and let sit for 15 minutes, then pat dry.

Cook Beef Mixture

Brown ground beef in a skillet (8-10 min), then add garlic, basil, and oregano. Stir in tomato sauce, salt, pepper, and water; simmer for 2-3 minutes.

Assemble Layers

Grease a baking dish with olive oil. Layer beef mixture, eggplant slices, ricotta, and mozzarella, repeating until topped with mozzarella.

Bake

Sprinkle Parmesan on top and bake for 30-35 minutes until cheese is golden and bubbly.
