Recipe Makes 4 Servings
- 1 tablespoon olive oil
- 10 ounces ground beef
- 2 tablespoons taco spice
- ¼ cup sour cream
- 2 cups shredded iceberg lettuce
- ½ cup diced tomatoes
- 4 carb-free tortillas
- Sea salt, to taste
1. Heat olive oil in a cast-iron skillet over medium-high heat.
2. Add ground beef. Stir in the taco spice and season with sea salt as needed. Cook until the meat is evenly browned.
3. Next, combine shredded cheddar cheese, heavy cream, cumin powder, and cayenne pepper in a microwave-safe bowl.
4. Microwave the mixture at 15- second intervals, stirring in between, until melted.
5. Then, lay a piece of tortilla on a plate. Layer in nacho cheese, cooked beef, lettuce, tomatoes, and sour cream.
6. Fold the edges of the tortilla toward the center, creating pleats as you go around.
7. Then, place the wrap, folded side down, on a hot skillet and toast for 1-2 minutes per side.
Make sure not to pack too much into your keto crunchwrap so it stays neatly folded while toasting. And overlap the edges as you wrap it up.
