1 stick unsalted butter melted 3 large eggs see post for vegan options 1 cup powdered erythritol ¾ cup almond flour ¾ cup cocoa powder 2 tablespoons coconut flour ½ teaspoon salt 1 teaspoon vanilla extract 1 teaspoon peppermint extract ¼ cup Pacific Unsweetened Hemp Beverage ½ cup sugar-free chocolate chips
1. Preheat the oven to 350°F and grease an 8” cast iron skillet with butter. 2. In a large bowl, beat butter, eggs, and powdered erythritol; stir in the remaining ingredients until smooth. 3. Pour the batter into the prepared skillet and bake for 30-35 minutes until the edges are crisp and the center is almost set. Let cool completely. 4. For the icing, beat together butter and peppermint extract until fluffy; mix in erythritol and hemp beverage. 5. Ice the cooled brownies, sprinkle with cacao nibs, slice into 12 pieces, and enjoy!
Check your brownies around the 25-minute mark and every 5 minutes after to avoid overbaking. Let them cool completely before icing to prevent a melty mess.
