1. Fry the bacon in a 10" or larger cast iron skillet until crispy. Remove and reserve the fat in the skillet. 2. Season the chicken with salt and pepper. Place it in the skillet with the bacon fat over medium heat. Cook for about 5-7 minutes per side until cooked through. 3. Toast the keto buns if desired. 4. Assemble the sandwiches by layering bacon, grilled chicken, avocado, red onion, tomato, lettuce, pepper jack cheese, and chipotle mayo on the buns and dig in!
