Juicy chicken wrapped in ham and Swiss cheese, coated with a crispy coconut crust, and served with a creamy Dijon sauce.

For the chicken

- 2 chicken breast filets - 2 slices smoked ham - 4 slices Swiss cheese - 1 whole egg, beaten - ¼ cup coconut flour - ½ cup desiccated coconut - 2 cups olive oil for frying - Pinch of sea salt - Pinch of freshly cracked black pepper

Ingredients 

Pound chicken breasts flat, season with salt and pepper, layer with ham and Swiss cheese, and roll tightly into a log using plastic wrap. Chill for 20 minutes.

Unwrap the chilled roulades, coat in coconut flour, dip in beaten egg, and roll in desiccated coconut. Fry in hot olive oil until golden brown.

Place the fried roulades on a cooling rack and let them rest for 10 minutes. Slice into discs.

Arrange the sliced chicken roulades on a plate and enjoy!

To avoid dry chicken, cook it until it reaches 165°F (74°C). Use a meat thermometer to check. Keep the heat medium when frying so the chicken cooks evenly and the crust doesn't burn.
