- 1 lb chicken breast - 2 tbsp Cajun seasoning - 3 tbsp avocado oil - 1 tbsp apple cider vinegar - 2 tbsp Dijon mustard - ⅔ cup mayo - ½ cup celery, diced - ½ cup carrot, shredded or julienned - ½ cup scallion, chopped - ½ cup red onion, diced - ½ red bell pepper, chopped - ¼ cup cilantro, minced - Salt and pepper to taste
Step 1: Season chicken with Cajun spices. In a 10.5” cast-iron skillet, heat oil over medium-high and sear chicken 4-5 minutes per side until blackened. Remove, chop, and mix with remaining ingredients. Season to taste.
