Snip off small leaves and trim the tops, removing sharp points. Then cut the artichokes in half.

Prep the artichokes

Cook artichokes in boiling water with bay leaf, lemon juice, and salt for 35-40 minutes until tender; set aside.

Boil them

Drizzle olive oil over the cooked artichokes, season with salt and pepper, then grill on medium-high heat

Grill the artichokes

Spread pesto sauce over each grilled artichoke half and garnish with grated Parmesan cheese.
