- 2 (7-ounce) flat iron steaks

- 1 tablespoon coarsely ground or crushed peppercorns

- 1 tablespoon bacon grease

Ingredients:

1. Heat a cast-iron skillet over medium heat. Pat steaks dry, rub with olive oil and salt, then coat with ground peppercorns.

2. Add bacon grease to the hot skillet, swirl to coat, and place the seasoned steaks in the skillet.

3. Cook the steaks for 5-7 minutes per side, aiming for an internal temperature of 135°F for medium rare or 145°F for medium.

4. Transfer cooked steaks to a plate, cover with foil for 15 minutes, then garnish with compound butter before serving.
