- 2 tablespoons avocado oil - 1 pound chicken thighs - 1 cup cauliflower - 1 cup green beans - 1 cup bell peppers - 1 cup zucchini - 1 jar of Maya Kaimal Madras Curry Simmer Sauce


1. Heat oil in a large 10" skillet over medium-high heat.

2. Brown the chicken for 2-3 minutes per side.

3. Add cauliflower, green beans, green peppers, and zucchini, and stir fry for 5-6 minutes.

4. Pour the Maya Kaimal Simmer Sauce and simmer for 5-7 minutes over low heat.

5. Top with cilantro, pickled onions, and sliced serranos.

6. Your flavorsome keto chicken curry is ready to serve.
