      I was disappointed after I made this recipe. It had a weird after taste which was probably the Xanthum gum. I’m not a fan of Xanthum gum. I wish there was another low carb way to thicken the sauce. I might try making this recipe again without the Xanthum Gum.

        Hi Heidi,

        Thank you for sharing your feedback! We totally get that xanthan gum isn’t for everyone. If you’re looking for an alternative, konjac flour (also called glucomannan) is a great keto-friendly option. It’s super low in carbs and does an excellent job of thickening sauces without any aftertaste—just a little goes a long way!

        That said, if you’re okay with a slightly thinner consistency, you can skip the thickener altogether and simmer the sauce over low heat to let it naturally reduce. It’ll still be flavorful, just not as clingy.
