These Chinese turkey lettuce cups are so delicious and super simple too. They can easily be packed and enjoyed at work for lunch (you’ll be the envy of the break room) or an appetizer for your next big get together, or even as a quick weeknight meal the whole family will love.
For this recipe I used ground turkey as my protein, partly because the grocery store was out of ground chicken and I really didn’t want to dirty more dishes than necessary, and partly because I believe varying your protein sources leads to overall better health. All too often I get stuck in a rut of eggs, chicken, and the occasional beef or salmon recipe, so it’s nice to explore new flavors and add more variety to my taste buds as well.
