These Chinese turkey lettuce cups are so delicious and super simple too.  They can easily be packed and enjoyed at work for lunch (you’ll be the envy of the break room) or an appetizer for your next big get together, or even as a quick weeknight meal the whole family will love.  

Keto Chinese Lettuce Cups

For this recipe I used ground turkey as my protein, partly because the grocery store was out of ground chicken and I really didn’t want to dirty more dishes than necessary, and partly because I believe varying your protein sources leads to overall better health.  All too often I get stuck in a rut of eggs, chicken, and the occasional beef or salmon recipe, so it’s nice to explore new flavors and add more variety to my taste buds as well.

Keto Chinese Turkey Lettuce Cups

These Keto Chinese Turkey Lettuce Cups make a great low-carb appetizer or light meal!

prep time: 5 minscook time: 15 minstotal time: 20 mins

ingredients:

  • 1/4 cup coconut oil
  • 1 lb ground turkey
  • 1 small onion, minced
  • 8 ounces shitake mushrooms, diced
  • green onions, minced
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ginger powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup tamari
  • 2 teaspoons white vinegar
  • 1 teaspoon fish sauce
  • Butter lettuce leaves, about 4 leaves per serving 

instructions

1. Heat coconut oil over medium high heat, add turkey to pan and brown 5-6 minutes crumbling with the back of a spoon.2. Add in spices and cook a minute longer.3. Add mushrooms and onion to the pan and cook 3-4 minutes until soft.4. Add in the tamari, fish sauce, vinegar, and green onions, stir to combine then cook another 3-4 minutes5. To serve, scoop the mixture into lettuce leaves.
