What is cube steak exactly?
Cube steak, sometimes called minute steak or Swiss steak, is meat that's been flattened with a tool. This leaves little cube-like marks on it, which is where it gets its name.
Keto chicken fried steaks often use cube steaks. Some people might call them keto country fried steak or keto minute steak. They might have many names, but they all promise one thing: a tasty meal every time.

How to make Keto Chicken Fried Steak: step-by-step guide
Cooking methods
Preparation steps
- Gather all the ingredients.
- Tenderize the meat using a meat mallet.
- Chop the parsley.
Cooking instructions
- In a shallow bowl, whisk the egg and cream.
- On a medium plate, mix the Parmesan, pork rind bits, onion, garlic powder, and paprika.
- Turn your skillet to medium-high heat and pour in the oil. Dip each steak in the egg mixture, then coat it with the cheese mix. Now, put them in the hot oil. Fry each side for about 3-4 minutes or until they're a lovely golden brown. After frying, set them on a cooling rack or clean kitchen cloth to drop the extra grease.
- Take out most of the oil from the skillet, but save about two spoonfuls. Drop in some butter and let it melt. Pour in the cream, let it boil, then turn down the heat to let it simmer.
- Sprinkle in some salt, pepper, and maybe some fresh parsley. If you want a thicker gravy, add a bit of xanthan gum and keep stirring for a few minutes.
- Place your crispy steak on a plate and pour on that delicious gravy. Enjoy!
Chef's pro tip
You don't want your steak's coating to turn too dark or burn because of super hot oil. Here's a trick: keep an eye on the oil's temperature. If it's too hot, the outside will get dark before the steak's even done. So, how do you know if it's just right? Use a kitchen thermometer to check! Aim for about 350°F (175°C). No thermometer? No worries. Just drop a tiny bit of the coating in. If it sizzles and turns a light golden color, you're good to go!

This recipe looks excellent but I do not like Parmesan cheese. Can I use shredded pepper jack or something like that?

Forgive my stupidity but I'm new to keto... what is pork rind dust??
Cast Iron Keto says
Hi! Pork rind dust is simply pork rinds blended into a bread crumb texture, hope this helps!

Instructions say to use Italian seasoning but it's not in the Ingredients the Ingredients call for 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon smoked paprika but never used in instructions
Cast Iron Keto says
Hi Chris,
We are sorry about the confusion, unfortunately, Italian seasoning should have been removed from the final recipe, it was missed during our final copy edit process.
A previous version of the recipe did include Italian seasoning, but we decided to remove it during our final taste test and altered the ingredients to include paprika, garlic, and onion powder.
I really appreciate you pointing this out to our team, we have corrected the recipe and promise that if you are willing to give it another try you will love it.
Thank you, Chris
Makayla says
Do we have to use a cast iron?
Cast Iron Keto says
Hi Makayla,
You don't have to use cast iron, a traditional skillet will work.
