Have you ever had warm chia pudding? Our recipe for easy Keto Chia Pudding can be served both warm or cold but we're t-totally obsessed with serving it warm! It's almost like a low-carb oatmeal (as in our Keto Oatmeal recipe), but with the punch of Omega 3's that chia seeds provide.
Typically, chia pudding is served cold and you have to let it sit for sometime to become pudding-esq. When serving chia pudding warm, it's ready in less than 10 minutes making this an awesome option for busy mornings. Or, treat the chia pudding as dessert, either way, it's delicious.

Ingredients in Keto Chia Pudding

- Bob's Red Mill Organic Black Chia Seeds - we love these tiny powerhouses that are packed full of omega-3 fatty acids, protein and fiber.
- Milk - you can use any type you wish, we usually use an unsweetened plain almond milk but regular milk, cream, soy, or coconut would all work just fine.
- Sugar-free liquid sweetener - we use a sugar-free maple syrup
- Spices - pictured here, we used chai spice but you can use any flavorings you like. Cinnamon is great if you're skipping the chocolate for a vanilla chia pudding. You could even go in a Mexican chocolate direction and add a pinch of ground cayenne or chipotle chili.
- Vanilla extract
- Sugar-free chocolate (optional) - if making chocolate chia pudding, we like to melt a but of 100% dark chocolate into the chia pudding
- Cacao powder (optional) - only if making chocolate chia pudding, skip for vanilla
- Pinch of sea salt

Chia Pudding Topping Ideas
There are a ton of topping ideas for Keto Chia Pudding. Fresh fruit like raspberries, strawberries, blackberries, and blueberries all work great. Flaked coconut, shaved sugar-free chocolate, whipped cream, or even chocolate fudge sauce or salted caramel sauce would be delicious if serving the pudding as a dessert.
Storage
Store any leftovers in an airtight container in the refrigerator for up to 5 days. Store the toppings separately.
Top tip
The perfect ratio for chia pudding for 4 servings is 2.5 cups milk to ½ cup + 2 tablespoons chia seeds.

Keto Chia Pudding
Ingredients
- ½ cup + 2 tablespoons Bob's Red Mill Organic Chia Seeds
- 2.5 cups milk of choice
- 2 tablespoons sugar-free maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon spices of choice see post for ideas
- Pinch sea salt
Optional for chocolate variation
- 1 ounce 100% dark chocolate
- 2 tablespoons cacao powder
Instructions
- Combine all of the ingredients in a small pot over medium heat. Bring to a simmer for 5 minutes until thickened. Serve immediately or chill until ready to serve.
