    What’s better than meatloaf? A Keto Cheeseburger Meatloaf that’s loaded with BACON.

    The best part of this Keto Cheeseburger Meatloaf is the bacon, no wait... it's the cheese...no it's the bacon... or maybe it's just the salty combination of the two that makes my dreams come true. Either way, I think we all can agree on two things; bacon makes everything better and cheese makes everything better too. The best thing about this meatloaf is that it is super cheesy and super bacon-y.

    Not only did we use Cheddar Moon Cheese as the “breadcrumbs” but we also stuffed the center with cheddar cheese. Yes, this may just be the most ridiculous and the best recipe on CIK to date. You’re welcome. Do us a favor and serve it up with a side salad would ya?

    How-To Stuff a Keto Cheeseburger Meatloaf

    In order to get that beautiful molten center of cheese just follow these simple steps.

    First up you’re going to blend up the Moon Cheese until it resembles breadcrumbs. You can do this with a food processor, blender, or a meat mallet...you’re choice. We love this mini food processor for small jobs like this.

    Next, you’re going to mix up the beef with the crushed Moon Cheese, cooked and crumbled bacon eggs, onion, pickles, seasonings, and sugar-free Worcestershire sauce.

    Here comes the key part. You’re going to take half of the mixture and place it in a 10” or larger cast iron skillet, or baking dish if you don’t have a skillet on hand (why?), then form it into the shape of a meatloaf with a divot in the center.

    Fill that divot with the shredded cheese then top it with the remaining meatloaf mixture. Press it all together making sure the sides are sealed.

    Next up, the sticky-sweet sauce. Mix the unsweetened ketchup, Worcestershire sauce, and brown erythritol. Pop that baby in the oven and let it do its thing.

    Ingredients

    • 1 ½ lbs ground beef
    • 1 package cheddar Moon Cheese crushed
    • 2 large eggs
    • 8 slices bacon cooked and crumbled
    • ½ cup diced dill pickles
    • ¼ cup minced white onion
    • 1 tablespoon Worcestershire sauce
    • 1 ½ teaspoons salt
    • ½ teaspoons black pepper
    • 4 ounces shredded sharp Cheddar cheese

    Glaze:

    • ¼ cup unsweetened ketchup
    • 2 tablespoons brown erythritol
    • 1 tablespoon Worcestershire sauce

    Instructions

    • Preheat the oven to 350° F.
    • In a large bowl combine the beef, crushed Moon Cheese, bacon, eggs, pickles, onion, Worcestershire sauce, salt, and pepper. Mix well.
    • Divide by half and place half in a 10" or larger cast iron skillet in the shape of a large meatloaf. Make a divot in the middle.
    • Add the shredded cheddar to the middle then top with the remaining meatloaf mixture. Press together the sides to seal in the filling.
    • In a small bowl mix together the topping. Pour over the meatloaf.
    • Transfer to the oven and bake for 60-70 minutes until the bacon is crispy and the internal temperature reaches 165° F. Remove from oven and let cool for 5-10 minutes before slicing.

      What size package of Moon Cheese? I'm assuming the 2 oz. size, but I bought my Moon Cheese at Costco, so I have 10 oz. packages.
